Brief History of Filipino Chicken Adobo
The beloved Filipino cuisine, Chicken Adobo has many cultural influences. In fact its roots can be traced back to the pre-colonial era. This was a time when indigenous people in the Philippines (PH) used vinegar and salt to preserve meats. Then the Spanish colonizers arrived in the 16th century and brought with them culinary techniques from Spain, such as methods of marinating meats in vinegar and spices. The term “adobo” is believed to come from the Spanish word “adobar,” which means to marinate or pickle (FilaManila). Together with the Spanish influence and techniques of the indigenous people of the Philippines, adobo was made. This dish is super popular in PH because of its practicality. It is really easy to prepare using readily available ingredients like vinegar, soy sauce, garlic, and bay leaves, and it could withstand the tropical climate without spoiling quickly. Today, chicken adobo remains a staple in Filipino households and is enjoyed by people all over the world as a flavorful representation of Filipino cuisine.

Ingredients for the Filipino Recipe Chicken Adobo
- 2 lbs chicken thighs or drumsticks, bone-in and skin-on
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 cup water
- 4 cloves garlic, minced
- 1 onion, sliced
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 2 tablespoons cooking oil
- Salt, to taste
- Optional: sliced green onions and red chili flakes for garnish

Instructions for the Filipino Recipe Chicken Adobo
- In a large bowl, put together the soy sauce, vinegar, water, minced garlic, sliced onion, bay leaves, and black peppercorns. Mix them together well.
- Add the pieces of chicken to the marinade. Make sure everything is fully coated! Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to 1 hour. But I recommend marinating it overnight to get the best flavor!
- After marinating, heat the cooking oil in a large skillet or pot over medium-high heat. Remove the chicken from the marinade and set aside, reserving the marinade.
- Add the chicken pieces to the hot skillet, skin side down, and cook until golden brown, about 4-5 minutes per side. You may need to do this in batches to avoid overcrowding the pan.
- Once the chicken is browned, pour in the reserved marinade along with any remaining onions and garlic. Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for about 30-40 minutes, or until the chicken is tender and fully cooked through.
- Once the chicken is cooked, remove the lid and increase the heat to medium-high. Allow the sauce to reduce and thicken slightly, about 10-15 minutes. Taste and adjust the seasoning with salt if needed.
- Once the sauce has thickened to your desired consistency, remove the bay leaves and discard. Garnish the chicken adobo with sliced green onions and red chili flakes, if desired.
- Serve the chicken adobo hot with steamed rice or your favorite side dishes. Enjoy your delicious Filipino chicken adobo!

Note: Chicken adobo is even better when allowed to marinate overnight, as it allows the flavors to develop and penetrate the meat.
